Blood Orange Olive Oil Cake

Ingredients
187g plain flour
150g granulated sugar
1 ½ tsp. baking powder
150g olive oil
x2 large eggs
2 blood oranges, zest & juice
½ a vanilla pod (or 1-2 tsp extract)
1 pinch fine salt
Method:
Pre-heat the oven to 180C.
Butter & dust (with flour) a standard loaf pan.
In a medium bowl, sift together the; flour & baking powder and set aside.
In another bowl, crack the eggs and whisk together with the sugar until frothy.
Once frothy, slowly emulsify in the olive oil in a thin stream.
Next, add in the; juice & zest from the oranges, along with the vanilla & salt.
Finally, gradually mix in the dry ingredients and take care not to overmix.
Pour the batter into the prepped loaf pan and bake for approx. 60 minutes or until a skewer comes out clean.
Allow the cake to cool before removing it from the pan.
To finish you can dust with icing sugar.
