Blood Orange Olive Oil Cake

Ingredients

  • 187g plain flour
  • 150g granulated sugar
  • 1 ½ tsp. baking powder
  • 150g olive oil
  • x2 large eggs
  • 2 blood oranges, zest & juice
  • ½ a vanilla pod (or 1-2 tsp extract)
  • 1 pinch fine salt

Method:

  1. Pre-heat the oven to 180C.
  2. Butter & dust (with flour) a standard loaf pan.
  3. In a medium bowl, sift together the; flour & baking powder and set aside.
  4. In another bowl, crack the eggs and whisk together with the sugar until frothy.
  5. Once frothy, slowly emulsify in the olive oil in a thin stream.
  6. Next, add in the; juice & zest from the oranges, along with the vanilla & salt.
  7. Finally, gradually mix in the dry ingredients and take care not to overmix.
  8. Pour the batter into the prepped loaf pan and bake for approx. 60 minutes or until a skewer comes out clean.
  9. Allow the cake to cool before removing it from the pan.
  10. To finish you can dust with icing sugar.
